Ingredients
  

  • 94 gms whole wheat flour
  • cup old fashioned rolled oats
  • ¼ cup granulated sugar
  • ½ cup pumpkin puree
  • 1 egg white
  • ¼ cup packed dark brown sugar
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • ¼ tsp salt
  • tsp ground cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ground ginger
  • tsp ground allspice
  • ½ cup mini semi-sweet chocolate chips
  • 1/2 cup raisins

Instructions
 

  • Preheat oven to 350°F (177°C). Prepare a baking sheet with parchment paper, or silicon baking mat, etc.
  • In one bowl, whisk pumpkin puree, egg white, and vanilla until smooth. In a second bowl, mix flour, oats, both sugars, baking powder, baking soda, salt, and all spices, then stir in chocolate chips and raisins. Gently fold the wet ingredients into the dry mixture until just combined—avoid overmixing. The resulting dough will be quite thick.
  • Scoop dough by spoonfuls onto baking sheets and gently press to your desired cookie shape. Bake 13-15 minutes until edges are lightly golden. Let cookies rest on the baking sheet for 5 minutes before moving to a wire rack.
