Instructions
In a large bowl, combine sourdough discard and warm water. Add instant yeast and stir briefly to dissolve. Add Italian seasoning salt and bread flour, mixing until a cohesive dough forms. Cover with a kitchen towel. Let dough rise in a warm spot for about 1 hour or until doubled in size.
Lightly grease a 9x13 inch baking pan or line with parchment paper.
Transfer the risen dough to your prepared pan and gently stretch to fill the corners. Cover and let rise about 45 minutes until puffy.
Preheat oven to 450°F. Gently dimple the surface with your fingertips, creating shallow indentations across the flatbread. Sprinkle with flaky sea salt. Bake 20-25 minutes until golden brown and crispy on top.
Cool for 10 minutes before slicing and enjoy your Rustic Sourdough Flatbread!
