Ingredients
- 155 gms unfed sourdough starter aka sourdough discard
- 255 gms warm water (100℉)
- 8 gms instant yeast
- 360 gms bread flour
- 10 gms salt
- 1 tbsp Italian seasoning or a mix of dried herbs of choice
- flaky sea salt. to taste
Instructions
- In a large bowl, combine sourdough discard and warm water. Add instant yeast and stir briefly to dissolve. Add Italian seasoning salt and bread flour, mixing until a cohesive dough forms. Cover with a kitchen towel. Let dough rise in a warm spot for about 1 hour or until doubled in size.
- Lightly grease a 9x13 inch baking pan or line with parchment paper.
- Transfer the risen dough to your prepared pan and gently stretch to fill the corners. Cover and let rise about 45 minutes until puffy.
- Preheat oven to 450°F. Gently dimple the surface with your fingertips, creating shallow indentations across the flatbread. Sprinkle with flaky sea salt. Bake 20-25 minutes until golden brown and crispy on top.
