Fat-free Date and Semolina Banana Muffins

  • 3 Medium ripe bananas
  • ¾ cup Semolina
  • ¼ cup White whole wheat flour
  • ½ cup All purpose flour
  • 2 Egg whites
  • ¼ cup Fat free milk
  • 50 gms Pitted medjool dates chopped into small pieces
  • 1 tbsp Honey
  • 1 tsp Cinnamon powder
  • 1 tsp Baking soda
  • 1 tbsp White vinegar
  • Cinnamon-sugar mix for topping optional


  • Preheat oven to 350° and grease/line a muffin pan. Make sure to generously grease the pan. I even grease my liner. Since these are being baked without any added fat, this step is crucial.
  • In a mixing bowl, mash the bananas with a fork. Add in rest of the ingredients except vinegar and mix until well incorporated.
  • Add in the vinegar and quickly mix it in well.
  • Pour in the muffin pan. Top with cinnamon sugar (if using) and bake for 20-25 minutes or until a toothpick inserted comes out clean.
